Cherry Rose Chip Cookies

 

INGREDIENTS

  • 1/2 stick softened butter

  • 1/2 cup brown sugar

  • 1/2 cup white sugar

  • 1 large egg + 1 egg yolk

  • 2 TBS Cherry Rose bitters

  • 2 cups flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 TBS crushed pistachios

  • 1/2 cup white chocolate chips

  • 1/2 cup dark chocolate chips

  • 1/2 cup chopped cherries (fresh, dried or even luxardo cocktail cherries)

INSTRUCTIONS

  1. Cream butter & sugars together in mixer with paddle attachment until smooth

  2. Add in eggs and bitters, mix until smooth

  3. Mix all dry ingredients together

  4. Add flour mixture to butter until dough comes together

  5. Add in pistachios, chocolate chips & cherries.

  6. Combine until dough pulls away from side of mixer

  7. Place dough balls 1/2 inch apart on parchment lined baking sheet

  8. Bake at 350 for 12-15 minutes or until light golden brown

  9. Remove from cookie sheet to wire rack to cool
