Pineapple Salsa/Salad

 

Ingredients:

  • 1 pineapple, peel removed-diced

  • 2 large tomatoes-diced

  • 1 red pepper-diced

  • 1 jalapeño-ribs and seeds removed-diced

  • 1/2 red onion, diced

  • 1 t cumin

  • 1/4 c cilantro-chopped

  • 2 T lime juice

  • 2 t olive oil

  • 1 T Habanero Lime Bitters

Instructions:

  1. Chop all the fruit and veggies into either a small dice for salsa or a chunky dice for a salad.

  2. Place all chopped items into a large bowl.

  3. In a separate small bowl add the oil, cumin, lime juice, cilantro and Habanero Lime Bitters.

  4. Pour mixture over the chopped fruits and veggies and gently mix until everything is combined.

  5. Season with salt and pepper.

  6. Let the mixture soak up all the flavors for at least 10 minutes before eating.

*For more heat replace the jalapeño with a habanero pepper.
