Pickled Plums

 

Ingredients:

  • 1 lb plums

  • 1/2 red onion-sliced

  • 1 in fresh ginger-thinly sliced

  • 1/3 c sugar

  • 1/2 c red-wine vinegar

  • 1/2 apple cider vinegar

  • 1 c water

  • 2 T Plum and Oak Bitters

  • 1 bay leaf

  • 3 cloves

  • 3 allspice berries

  • 1/2 t whole peppercorns

  • 1 t salt

Instructions:

  1. Remove the pit from the plums and slice into 1/4 in slices.

  2. In a jar, layer the plums and the onions on top of each other.

  3. In a small pot heat the sugar, vinegars, water, spices, Plum and Oak Bitters, salt and ginger together until the sugar has dissolved.

  4. Carefully pour the mixture into the jar over the plums and onions.

  5. Make sure all the spices get into the jar.

  6. Let sit uncovered until completely cool.

  7. Lid the jar and store in the fridge.

  8. Use on salads, sandwiches, or as a topping to some grilled protein.
