Marinated Mushrooms

 

Ingredients:

  • 24 oz Cremini mushrooms

  • 1/3 c olive oil + 1 T

  • 1/3 c apple cider vinegar

  • 1 T maple syrup

  • 2 cloves garlic-minced

  • 1 t salt

  • 1 t chili flakes

  • 1 T dried oregano

  • 1 T dried thyme

  • 1 T Charred Cedar and Currant Bitters

Instructions:

  1. Prepare the mushrooms; using a damp cloth gently remove any dirt. Pop off any large woody stems, leave the small ones.

  2. Heat 1 T of olive oil in a large skillet over med heat.

  3. Add the mushrooms to the pan and sauté until they start to brown slightly and water starts to come out.

  4. Remove from heat and let cool slightly.

  5. In a bowl mix together all the remaining ingredients for the marinade.

  6. Pour mixture over the mushrooms while there are still warm. Gently stir to combine.

  7. Let mushrooms marinate for at least 1 hour, ideally 8 hours.

  8. Serve on a charcuterie board, as a side dish or in a salad.

*pro tip-when the mushrooms are gone save the liquid and use to marinate your favorite protein.
