Honey Hops Butter(ed) Cornbread

 

Ingredients:

  • 1 c flour

  • 1 c cornmeal

  • 1/4 c sugar

  • 2 tsp baking powder

  • 1/4 tsp baking soda

  • 1 tsp salt

  • 1 1/2 c buttermilk

  • 1/4 c vegetable oil

  • 5 T butter - melted - split

  • 1 tsp Burnt Honey Hops Bitters

  • 1 egg

  • 1/2 c fresh corn kernels

Honey Hops Butter

  • 1/2 c butter - softened not melted

  • 2 T honey

  • 1 T Burnt Honey Hops Bitters

  • flaky sea salt

Instructions:

  1. Preheat oven to 400 degrees. When oven is heated put your cast iron skillet into the oven to warm while you make the batter.

  2. To make the batter, in a small bowl whisk together the buttermilk, oil, 4 T melted butter, Honey Hops Bitters and egg.

  3. In a separate bowl mix the dry ingredients together. Make a well and pour the wet mixture into the dry.

  4. Mix until just combined. Add the corn kernels and mix two or three times.

  5. Remove cast iron from the oven and swirl 1 T of melted butter around the bottom and sides of pan.

  6. Pour batter into skillet and bake for 20-25 minutes or when a toothpick comes out clean.

  7. While the cornbread is baking make the Honey Hops Butter.
