Grilled Apricot Salad

 

Ingredients:

  • apricots (or any stone fruit)

  • prosciutto

  • goat cheese, blue cheese or feta

  • spring mix

  • pistachios-chopped

Dressing

  • 1/2 cup peaches-chopped

  • 1/4 cup apricots-chopped

  • 1/4 cup basil

  • 3 TBS red wine vinegar

  • 2 TBS olive oil

  • 1 TBS tahini

  • 1 tsp honey

  • 1 TBS Apricot Vanilla Bitters

  • salt and pepper

Instructions:

  1. Preheat your grill.

  2. Make the dressing; put all the ingredients for the dressing into a blender and puree until smooth. Taste and season with salt and pepper.

  3. Cut the apricots/stone fruit in half and brush with a little oil, salt and pepper. Grill until slightly charred on the cut side. Flip and cook another minute. Remove from grill. Cut into bite size pieces.

  4. Assemble the salad; lay a bed of greens down on a platter, place the grilled apricots all over, tear the prosciutto into smaller pieces and scatter around the platter and crumble the cheese.

  5. Drizzle the dressing all over the salad and top with pistachios.

  6. Serve as a light meal or along side your favorite grilled protein.
