Cheesy Cauliflower
Ingredients:
1 head cauliflower
4 T unsalted butter
4 T flour
1 t dijon mustard
1/4 t Aromatic Bitters
salt and pepper
pinch of cayenne
2 c whole milk
1 1/4 c aged cheddar cheese
chives for garnish
Instructions:
Heat oven to 400 degrees.
Trim cauliflower into florets and remove core.
Par boil for 5-7 minutes-cauliflower will be tender but firm.
In a saucepan melt the butter over med/high heat.
Add the flour and whisk to combine-cook for 1 minute.
Add mustard and a pinch of cayenne and stir to combine.
Drizzle in milk in a thin steady stream, whisky the whole time to prevent lumps.
Bring mixture to a simmer, stirring constantly. Mixture will thicken.
Add one handful of cheese at a time and stir. Repeat until all cheese is gone.
Add Aromatic Bitters and salt and pepper to taste.
Grease a baking dish and add the par boiled cauliflower and spread in an even layer.
Spoon the sauce over the cauliflower.
Bake for 30-35 minutes-it will be bronzed and bubbly.
Sprinkle with fresh chives and eat!
