Cheesy Cauliflower

 

Ingredients:

  • 1 head cauliflower

  • 4 T unsalted butter

  • 4 T flour

  • 1 t dijon mustard

  • 1/4 t Aromatic Bitters

  • salt and pepper

  • pinch of cayenne

  • 2 c whole milk

  • 1 1/4 c aged cheddar cheese

  • chives for garnish

Instructions:

  1. Heat oven to 400 degrees.

  2. Trim cauliflower into florets and remove core.

  3. Par boil for 5-7 minutes-cauliflower will be tender but firm.

  4. In a saucepan melt the butter over med/high heat.

  5. Add the flour and whisk to combine-cook for 1 minute.

  6. Add mustard and a pinch of cayenne and stir to combine.

  7. Drizzle in milk in a thin steady stream, whisky the whole time to prevent lumps.

  8. Bring mixture to a simmer, stirring constantly. Mixture will thicken.

  9. Add one handful of cheese at a time and stir. Repeat until all cheese is gone.

  10. Add Aromatic Bitters and salt and pepper to taste.

  11. Grease a baking dish and add the par boiled cauliflower and spread in an even layer.

  12. Spoon the sauce over the cauliflower.

  13. Bake for 30-35 minutes-it will be bronzed and bubbly.

  14. Sprinkle with fresh chives and eat!
