Blueberry Plum Crisp

 

Ingredients:

  • 2 c blueberries-fresh or frozen

  • 1 lb plums

  • 1/4 c sugar-use more or less pending sweetness of fruit

  • 2 t Blueberry Cardamom Bitters

  • 1 T cornstarch

  • zest of one lemon

  • juice of 1/2 lemon

Topping

  • 1 c rolled oats

  • 3/4 c all-purpose flour

  • 1/3 c brown sugar

  • 1/2 stick unsalted butter-softened

  • 1/4 t Blueberry Cardamom Bitters

  • 1/4 t cinnamon

  • 1/4 t salt

Instructions:

  1. Preheat the oven to 350 degrees.

  2. Butter an 8x8in oven safe dish. Set aside.

  3. In a medium size bowl gently mix all the filling ingredients together and pour into the buttered dish.

  4. Make the topping; in a medium bowl mix everything but the butter together.

  5. Using your hands break up the softened butter and work into the dry mixture.

  6. Mixture will take on the consistency of wet sand and will keep its shape when gently squeezed together.

  7. Sprinkle topping mixture all over the filling.

  8. Bake until the filling is bubbly and the top is lightly browned.

  9. -Remove from oven and let cool slightly.

  10. -Serve warm with yogurt or ice cream!
