Apricot Baked French Toast

 

Ingredients:

  • 1 loaf brioche bread

  • 8 eggs

  • 1 cup milk

  • 1 tsp Apricot Vanilla Bitters

  • 2 TBS maple syrup

  • 2 TBS sugar

  • 1 tsp cinnamon

  • 8 oz bacon-cooked

Instructions:

  1. Cut the bread into 1 in. chunks-leave out overnight to dry out.

  2. Chop the bacon into 1/2 in. pieces and cook in a skillet. Let cool.

  3. Grease a baking dish with butter and put the bread into the dish.

  4. Whisk together the eggs, milk, cinnamon, syrup, and Apricot Vanilla Bitters.

  5. Slice apricots into bite size pieces and put into a bowl with 1 TBS of sugar and a dash of Apricot Vanilla Bitters. Stir together.

  6. Pour egg mixture over the bread chunks, make sure every piece of bread has been coated.

  7. Evenly spread the cooked bacon and sugar coated apricots over the entire baking dish.

  8. It is highly recommended to let this sit in the fridge overnight for all the juices to be absorbed.

  9. Pull from the fridge 1 hour before baking.

  10. Sprinkle with 1 TBS of sugar for a nice crunchy top.

  11. Bake in a 350 degree oven for 30 minutes or until the top is slightly brown.

  12. Serve warm with lots of maple syrup.
